Quinoa, Golden Beet & Feta Salad

Ingredients
  

  • 3 roasted golden beets peeled & chopped
  • 1 clove garlic crushed
  • 2 tbsp chopped Scallion
  • 1.5 cups cooked quinoa
  • 2 tbsp fresh lemon juice
  • 1 tbsp extra virgin olive oil
  • Salt/Pepper to taste
  • ΒΌ cup chopped pistachios
  • 1 ounce feta cheese crumbled
  • 2 tbsp fresh chopped basil

Instructions
 

  • Grab a large bowl and combine chopped beets, garlic, scallions, cooked quinoa, lemon juice, extra virgin olive oil, salt & pepper.
  • Gently mix until everything is well combined.
  • Gently stirring in the feta cheese, pistachios & fresh basil.
  • Give it a taste. Adjust your seasonings & enjoy!
