Ingredients

roasted golden beets
peeled & chopped

garlic crushed

chopped Scallion

cooked quinoa

fresh lemon juice

extra virgin olive oil
Salt/Pepper to taste

chopped pistachios

ounce
feta cheese crumbled

fresh chopped basil
Instructions
Grab a large bowl and combine chopped beets, garlic, scallions, cooked quinoa, lemon juice, extra virgin olive oil, salt & pepper.
Gently mix until everything is well combined.
Gently stirring in the feta cheese, pistachios & fresh basil.
Give it a taste. Adjust your seasonings & enjoy!
