- 3 roasted golden beets peeled & chopped
- 1 clove garlic crushed
- 2 tbsp chopped Scallion
- 1.5 cups cooked quinoa
- 2 tbsp fresh lemon juice
- 1 tbsp extra virgin olive oil
- Salt/Pepper to taste
- ¼ cup chopped pistachios
- 1 ounce feta cheese crumbled
- 2 tbsp fresh chopped basil
